Based in a beautiful, fully-staffed shooting lodge in Scotland, we are looking to recruit an exceptional chef to work 5-months, from 25th August 2021 until 16th  January 2022. 

The chef must be able cook traditional dishes, including game and roasts, along with simpler, well-prepared and carefully presented bistro style dishes, such as a good steak with side dishes, through to more adventurous, fusion inspired plates. Whatever the cooking style, the emphasis must always be on using super quality ingredients, locally sourced whenever possible, which are then combined with imagination and flair.

Working a 5-day week, shoot weekends are generally just 3 nights, but because the client can host as many as 16 guests, the chef must be organised, methodical and always calm, choosing menus that suit both the occasion and the number of guests.

Typical requirements include:

  • Buffet Breakfast  (with eggs cooked to order)
  • Lunches on shoot weekends they are generally taken care of by the gamekeeper's wive's and are served 'on the hill'. However, if lunch is required at the lodge, the chef will be expected to prepare 2 course's which might include a hearty soup and homemade bread or a salad, on Sunday a traditional roast is likely to be served
  • Occasional afternoon tea items (sandwiches / cutting cake / scones)
  • Pre dinner canapés
  • Dinner 3-courses, occasionally with cheese served as a 4th course. 

 

The family have no specified allergies or dislikes, although obviously some guests may present requirements that the chef must cater.

At present the family have 11 shoot weekends scheduled between the end of August and January. Because the family spend the rest of their time in London, they would like the chef to be flexible to the idea of cooking for the family in London if/as required.

NB. Candidates must have a valid driving licence

Candidate must also be able to present:

  • Excellent references;
  • A clean driving license;
  • evidence they have worked in a high profile household(s);
  • Excellent knowledge of the rules of etiquette, protocol and good manners;
  • The ability to always remain professional in every circumstance;
  • The ability to maintain discretion and confidentiality;
  • Have a pro-active approach to work;
  • A Clean Police Record and be happy to undergo a DBS Check (there are young children in the house).

 

While it is important that candidates present the right credentials, the client would also like to emphasis that they wish to find a chef who has:
